We custom design each party catering menu to your needs, but here are some ideas for how we can create a great party for you as well as your guests. We have two chefs on staff who will cook for you on site, or we can cook food here for you to pick up, or we can deliver it hot and ready to serve. We provide food and cooking staff, and can recommend clean-up staff as well as sources for renting tents, tables and chairs. We can also recommend wines, 
though we no longer sell wine ourselves. 
Oyster Bar:

For parties formal or informal, we provide the oysters, crushed ice, trays, condiments and someone to open them. Oysters, both East and West Coast varieties, are market price, and staff to open them is $65/hour. 
Outdoor Grilling Party: 
* Hors d’Oeuvres Trays - Shrimp, Shrimp & Claws, Hot & Cold Smoked Salmon, Poached Salmon, Spreads (Shrimp, Smoked Salmon, Smoked Whitefish, Crab-blend), oysters, or custom trays with your choice of cooked fish or shellfish. 
* Salads, Sides & Salsa - Green Salad, Pasta, Potato, Tuna, Coleslaw, Seafood Harvest, Pico de Gallo, Tropical Salsa, Roasted Vegetables, Herb Roasted Potatoes, Tomato Bruschetta, fresh local Corn on the Cob fixed on the grill & more. We get much of our summer produce from local  Illinois farmers.
* Main Course - Kebabs (shrimp, salmon, tuna, swordfish, mahi mahi, marlin etc.) with appropriate marinades or grilling sauces; Lobster Tails skewered and grilled, served with lemon and Herb Butter; your choice of fish fillets seasoned and grilled, with a wide choice of toppings, incuding our various fresh pestos and salsas, or blackening rubs. We also have fresh Salmon Burgers, great on the grill. 
* Dessert - We can provide a slection of pies, including Key Lime, Oreo Key Lime, Baked-in-a-Bag fruit pies from Wisconsin (Apple, Cherry, Blueberry), and our own individual tarts, including, Key Lime, Dark Chocolate, Door County Cherry and Oreo Chocolate. We also have locally made Homer’s Icecream. If you prefer something low cal, we will supply fresh seasonal fruit.

Surf & Turf:

We don’t carry meat, but for parties we can obtain prime beef tenderloin, and grill the beef and lobster tails to serve together with your selection of side dishes. 
Lobster Boil/Clam Bake: 
We can do a lobster boil at your home for up to eight people, for larger groups we would need to cook the lobster in our kitchen and bring them ready to serve. A traditional lobster boil includes one live lobster per person (market price), clams, potatoes and corn on the cob. We include our Creamy Coleslaw, fresh bread, lemons and melted  butter. Food is priced per person, based on size and cost of lobsters. Price for chef is $75/hour, an assistant is $50/hour, depending on need/size of party. 
Dinner Party:

For more formal sit-down dinner parties, we have our assortment of hors d’oeuvres (above), as well as our selection of gourmet bisque soups, a perfect first course. Our fresh entrees include Salmon Cozies, Stuffed Salmon, and Papillotes (fish wrapped in parchment paper), which can be made with a variety of fish and fillings, including Provencal, Au Jardin and Mediterranean. We can also prepare your choice of fish or shellfish, grilled, seared and baked, or baked, then topped with your choice of fresh pesto, sauces or salsa, and served with your choice of our fresh sides, including Herb Roasted Potatoes, Garlic Mashed Potatoes, Almond & Garlic Green Beans, Green Salad, Roasted Vegetables, Roasted Squash and more.  To prepare seafood on site, chef will need to know that host has an adequate oven and cooktop for the amount of food. Otherwise, food can be prepared in our kitchen and brought to your home. Desserts are the same as above.
